Galette des Rois - The Kings Cake
Because it's that time of the year when the King needs to choose its Queen!

After the New Year, the festive season continues in France. On the 6th of January, we celebrate the 3 king’s day, the Epiphany. On that day, a King is to be chosen, For that, we prepare a pie in which is hidden a small object or a bean. The person who will receive the slice of the pie containing the bean, will be named the King of the year. He will then choose his Queen.
I found the recipe of Cyril Lignac on Pinterest and decided to give it a go. I know that he is one of the best chefs in Paris, especially for his pastries, so I thought I couldn’t go much wrong. And I was right! The pie was really good and not too sweet.
So here is what you will need.
RECIPE:
Preparation time: 1 hour
Course: Dessert
Color: Beige
Servings: 4 to 6
INGREDIENTS
For the custard:
2 eggs
50 g of sugar
30 g of flour
25 cl of milk
1 vanilla pod
For the Almond cream:
3 egg yolk
125 g of almond grounded
100 g of sugar
125 g of butter
For the frangipane
Mix the custard and the almond cream
For the Galette des Rois - King's Pie
2 rolls of puff pastry
2 egg yolk
INSTRUCTIONS
1. First, Prepare the custard.
Mix the eggs with the sugar until the mix becomes foamy.
Add the flour and mix properly.
Put the milk in a saucepan
Grate the vanilla to extract the beans and incorporate to the milk.
Heat the vanilla & milk and pour it on the egg and sugar mix,
Transfer this mix in the saucepan and put back on low to medium heat until the sauce becomes thick. Around 5 minutes. Keep stirring while it thickens.
Once done, cover the custard with a plastic wrap and let it cool down during around 1 hour.
Note: The plastic wrap should be covering directly the custard and not the container, In french we say “filmer au contact”.
2. Second – Almond cream.
Mix the soft butter and the sugar until the mix becomes whitish.
Add one egg at the time.
Add the almond powder.
3. Third – Frangipane
Mix the Custard & the almond cream.
4. Confection of the Kings cake.
Place the first puff pastry on a cooking tray.
Pour the Frangipane on the puff pastry leaving 2 cm all around.
Hide a “Feve” in the frangipane
Cover with the second dough
Seal both bough together.
Brush egg yolks on the dough.
With a knife draw some lines on the dough.
Let the pie sit for 1 hour in the refrigerator.
Preheat the oven at 200” c
Place the pie in the oven for 10 minutes at 200”
Reduce heat to 180” for another 30 minutes.
Ok, so it’s not to eat if you are on a diet, but it’s really good! So sometimes you can let go, indulge and enjoy!
